Quality of honeys

What is the difference in quality between 2 honeys ?

All the honeys presented are of an optimal quality and always 100% pure and natural*.

Their taste depends on the flower(s) that have been harvested. Monofloral honeys (acacia, orange, lime, …) are more expensive because they are rarer than polyfloral honeys (thousand flowers, all flowers, …).
The color of the product in the jar is the color of the honey. Nothing can be removed or added to the honey.
